INGREDIENTS
1. 1 tablespoon grapeseed oil
2. 3 organic cucumbers, cut into ¼-inch thick rounds
3. ½-1 teaspoon Kosher salt, to taste
4. ½-1 teaspoon black pepper, to taste
5. 1/3 cup organic tomato paste
6. ½ cup raw goat cheese crumbles
7. 1 tablespoon Italian seasoning
PREPARATION
1. Preheat oven to broil.
2. Heat grapeseed oil in a large skillet over medium-high heat.
3. Working in batches, add cucumber and cook, flipping once, until golden, about 1-2 minutes on each side; season with salt and pepper, to taste.
4. Place cucumber rounds onto a large baking sheet. Top each round with tomato paste and raw goat cheese crumbles; sprinkle with Italian seasoning.
5. Place into oven and broil until the cheese has melted, about 1-2 minutes. Serve immediately.
