INGREDIENTS
Crust:
1. 1 cup pitted dates (soaked overnight if dry)
2. 1/2 cup raw almonds, chopped
3. 1/2 cup raw walnuts, chopped
4. 1/4 cup unsweetened, shredded coconut
5. 1 tablespoon coconut oil
Filling:
1. 2 cups raw cashews
2. 1/3 cup melted coconut oil
3. 1/2 cup maple syrup
4. 3/4 cup lime juice (approximately 8-9 limes)
5. 1 teaspoon pure vanilla extract
6. 1 teaspoon matcha powder
PREPARATION
1. To make the crust, combine all the ingredients in a food processor until they stick together.
2. Once the crust is sticky, press it down into a 9 inch glass pie dish, making sure to cover the bottom and sides.
3. Blend the filling ingredients in a food processor until soft and creamy.
4. Pour the filling over the crust and place in the freezer for at least 3 hours (or let it sit overnight).
5. Take the pie out of the freezer 20 minutes prior to eating.
